I was craving a chocolate banana bread for weeks,and these oatmeal chocolate chip banana bread bars are a perfect dessert/snack/treat for the colder days! They are filling, comforting and easy to make. You could freeze them, add to your school lunches, or simply serve as a dessert with a cup of milk.

Since I never really baked with oats, I wasn’t sure what to expect. Will it became gooey or crunchy? Well, a bit crunchy is the right answer, and so much more satisfying too! Also, oats are considered as one of the super foods, and their health benefits are really astonishing! So I think that these bars count almost as healthy snack!

And thanks to this recipe I finally managed to convince my older daughter to eat bananas! She used to love them as a baby and a toddler, but for last couple of month, as soon as there would be a little-tiny–mini-almost-invisible brown spot, she wouldn’t eat it. Up to the point, when she would just say that she doesn’t like bananas anymore! Though it was clearly just her obsessing over brown spots. And you should see my face, I mean, really, you don’t like bananas?! Bananas?? So finally, thanks to these lovelies, she decided that bananas are cool again, and even asked for some real ones for breakfast the other day! Victory!

Here’s what you’ll need:

1 cup cake flour (or 1 cup flour and 1/2 teaspoon baking powder)
1/2 sugar
1/2 cup melted butter
2 eggs
2 mashed bananas
3/4 cup oats
1/2 cup chocolate chips

Mix flour, sugar and butter together, then add eggs and mashed bananas. Add oats and chocolate chips, and bake for around 40 minutes on 350F. Enjoy!
