Are you always looking for new lunch ideas? I am, since we spend so much time at home with kids, I’m always in search for new, healthy and fast lunch options. And there is nothing faster then a sandwich :). Sure, croissants are full of butter, but from time to time it’s ok to treat yourself :). Then again avocados are full of healthy fats and there smooth taste works great with the kick from the horseradish. Topped with thin slices of crunchy radish, this sandwich is anything but ordinary !
1/2 teaspoon horseradish
1/2 teaspoon light mayo
Mash the avocado with the fork, add mayo and horseradish, spread on a half of the croissant, and top with sliced radish and a second health of the croissant. So fast, so good :).
